Recipe: Low-glycemic Quinoa Cookup

Here’s a variation of one of my favorite recipes called Quinoa Cookup.  This quick nutritious meal is sure to please even the pickiest eater in your family and it’s great for hiding lots of veggies!  And best of all – it’s low-glycemic.

1 cup organic quinoa
1 ½ cups water
2 tbs organic coconut oil
3 cups of chopped veg (your choice: sweet peppers, cauliflower, broccoli, and zucchini)
2 tbs soya sauce
3 cloves garlic, minced
½ Caribbean hot pepper
½ cup toasted slivered almonds

  1. Rinse quinoa in strainer to remove residue. Cook in water for 15 minutes with a pinch of salt then set aside.
  2. Heat oil, add garlic and pepper and cook for 2 minutes over medium heat.
  3. Add vegetables and cook until firm. Add cooked quinoa and soya sauce.
  4. Top with toasted almonds.
